Cocktail Appetizer

This is a very refreshing & well appetizing dish. And it is always a hit in any party. Perhaps its something to do with the mint or perhaps the sweet & sour & a little spicy punch. 
No cooking is needed  here. That's why it is so simple.

You can use any types of clams or even prawns. But make sure u drain them well. When using prawns, blanch them and set them aside. 


You have the pleasure to play around with the fruits. Use mangoes or melons instead of apples. Replace pomelo with oranges. 

Pacific Clams Cocktail 
Ingredients
1 can of pacific clams, drained well
1 green apple
1 red apple
Sauce
1 cup of Thai chili sauce (use Kimball)
1/2 a red onion, finely chopped 
2 chili padi (bird's eye chili), finely chopped
5 mint leaves, finely chopped
1 lemon or 2 lime, juiced
3/4 tbsp of fish sauce
1 tsp of olive oil
Garnish
1/4 cup of peeled pomelo or orange (omit if you don't have this)
2 parsley leaves, finely chopped
Method
1. Cube the apples & soak them in salt water.
2. Mix the sauce in a big bowl. 
3. Toss in the pacific clams and apple cubes. Make sure all the ingredients are evenly coated by the sauce. 
4. Cling wrap it and chill it in the fridge for 30 minutes.
5. Remove from fridge. Top with pomelo and parsley before serving!

Brownies

It was the holiday season. So I decided to bake something.
To tell you the truth, I have not been baking for 3 years. Well...maybe the only thing I have baked every year is Pineapple Tarts. I will share my Pineapple Tarts recipe on another day.
As for today, it will be something rich and moist and well...definitely sinful!
Walnut Brownies!!!


Ingredients
1/2 cup white sugar
2 tbsp butter (I used salted)
2 tbsp water
1 1/2 cup of semisweet chocolate chips dark chocolate chips (*I used Hershey's mini dark chocolate chips)
1 cup of walnut
2 eggs
1 tsp vanilla extract
2/3 cup all purpose flour
1/4 tsp baking soda
1/4 tsp salt

Preheat oven at 160°C. Grease a 8x8 inch square pan.

Sift the flour in a big bowl and add in the salt and baking soda. Combine well & set aside.

If you are lazy like me, just microwave the sugar, butter and water for 40 seconds. Remove from microwave and stir. Make sure it has melted completely.

Add in the chocolate chips and stir until melted and smooth. Add in the vanilla extract and the eggs.

Stir dry ingredients into the chocolate mixture. Once combined, add in the walnuts and give it a few stir.

Spread the mixture evenly into the prepared pan.

Bake for 25 to 30 minutes in the preheated oven.

Allow it to cool in the pan. Cut them into squares & if you like, sift some icing sugar on top of them!

They are sinfully chocolatey DELICIOUS! Everyone will love it!
